4. Clean up time comes after closing time

This one really gets me. We are going to start telling your boss what you are up to.  Cleaning up 15 or even 20 minutes before closing!  Mopping the floor around paying customers’ feet just so you can get home a little earlier?  Do you know how much your boss paid for this real estate?  And various food and beverage licenses?  Do you realize that driving away customers 25 minutes before closing can mean the difference between prosperity and breaking even for the pale face that is feeding your mother in Guadalajara? 

Enough already.  No more noise, no more foul detergent smells, no more celebrating while we are finishing our term papers over an under-heated earl grey.  If its 10:55 pm, its five minutes before I get up and go.  Don't irritate me.

 


5. If you are filling our water glass, no chit-chat.

Here’s another tip for restaurant employees.  We all appreciate the enterprising Latino laborer, but when we are dining out at the local gastropub the last thing we want to do is make time with our former gardener.  In our younger days we would have admired your pluckiness.  We might have tried to practice our high school Spanish on you.  Not anymore.
